Dhoodh Mohan or traditional name kharcha mithai is a sweet dish which is mostly made in Lucknow and Faizabad side area.
Don't know why it is called kharcha mithai . I heard about it when my eldest sister in law made it as the first dish she cooked post marriage.
Traditionaly it is made in striped form but i make it in ball form coz i like it that way.
It is made by making small balls of maida, Fried and cooked in milk with lots of nuts, saffron .
This recipe is very close to my heart because my sister in law(bhabhi) loved it and often made it. I often make this recipe at home because everyone loves it.
Preparation time----15 minutes
Cooking time-- 45 minutes
Serves--6
Type- Dessert
Ingredients:-
- Full cream milk 1 litter
- Refined flour 2 tbsp
- Sugar as per taste or 2 tbsp
- Milk made 1 tbsp
- Chopped cashew nut 2 tbsp
- Chopped almonds 2 tbsp
- Chiraonji 2 tbsp
- Pistachio 2 tbsp
- Green cardamom powder 1+1 tsp
- Pure ghee 1 tbsp + for frying
- Saffron 1/4tsp
- warm milk 1/4cup
- chopped nuts and rose petal for garnish
Recipe Procedure :-
- Boil milk in a heavy bottom pan. After boiling, add chopped nuts, milk made, cardamom powder and turn the heat to low. Keep stirring occasionally.
- Soak saffron in warm milk keep aside.
- In a bowl add flour, cardamom powder and make a thin batter by adding water.
- Heat 1 tbsp ghee in a pan and add batter cook while string continuously till its reaches the consistency of a halwa.
- Now make small balls from this mixture, heat the ghee in another pan turn the heat to slow and fry the balls till they turn golden. It will take 15 minute per batch.
- Now add the fried balls in milk and cook for 5 to 8 minutes more. Add soaked saffron.
- Switch off the gas and garnish with chopped nuts. Serve chilled.
Note:-
- You can use tond milk.
- Add sugar as per your taste.
सामिग्री :-
- फूल क्रीम दूध १ लीटर
- मैदा २ बड़े चम्मच
- चीनी स्वादनुसार अथवा २ बड़े चम्मच
- मिल्क मेड १ बड़ा चम्मच
- बारीक कटे काजू २ बड़े चम्मच
- बारीक कटे बादाम २ बड़े चम्मच
- बारीक कटे पिस्ते २ बड़े चम्मच
- चिरौंजी २ बड़े चम्मच
- इलायची पाउडर १+१ छोटा चम्मच
- देसी घी १ बड़ा चम्मच और तलने के लिए
- सजाने के लिए कटी मेवा और गुलाब की पत्ती
बनाने की विधि :
- दूध को एक भरी तले के बरतन में उबलने के लिए चढ़ा दें और एक उबाल आने के बाद इसमें कटी मेवा, चीनी, इलाइची पाउडर और मिल्क मेड डालकर बहुत धीमी आंच पर चढ़ा दें बीच- बीच में चलाते रहे ताकि नीचे से जले नहीं।
- अब एक बर्तन में मैदे में इलाइची पाउडर और पानी डालकर पतला घोल बनाएं।
- अब एक पैन में १ बड़ा चम्मच घी गरम करके इसमें इस घोल को लगातार चलाते हुए पकाएं जब तक की हलवे की तरह न हो जाये।
- अब इस मिश्रण से छोटी- छोटी गोलियां बनाकर इन्हें घी में बहुत धीमी आंच पर तलें , ध्यान रहे आंच तेज़ न करें अन्यथा गोलियां फट जाएँगी। इनको तलने में कम से कम १५ मिनट लगेंगे।
- अब इन तली हुई गोलियों को दूध में डालें और ५ से ८ मिनट के लिए और पका लें।
- गुलाब की पत्ती मेवा से सजा कर ठंडा या गर्म सर्व करें ।
This was an exotic dessert for sure. I have a birthday coming up so will make this labour of love mitai. Infact liked its name as well- milkmohan.
